2 Ingredient Paleo Pancakes

For those of you who know me and follow my recipes, you should have realised by now that I am a no fuss cook! I use only wholefood healthy ingredients and I don’t like to cook anything that is fiddly and tedious. I am no master chief, but I am very clever at creating healthy alternatives to many popular food dishes and items.

These ‘two ingredient pancakes’ are not exception. They are nutrient dense, gut friendly, gluten free, dairy free, brain feeding and will keep you satiated for hours. My kids love them served with banana, cinnamon and honey. They are so quick to whip up, that we even eat them on school mornings.

Getting into the kitchen and cooking your own food is the best thing you can do for your family’s health and it’s such a privilege too. Happy cooking!!

Equipment

  • frying pan

Ingredients

  • 1 medium banana
  • 1` egg, free range

Instructions

  • In a small bowl, mash your banana.
  • Add the egg and mix together.
  • Heat frying pan. Add 1 tbsp of butter, ghee or coconut oil. When it it sizzling pour your pancake batter in. Turn the heat to low. Cook until it is golden brown and then flip over.
  • When cooked on both sides, remove from the pan and serve. Serve with berries, sliced banana, cinnamon, honey or anything you desire. Enjoy!
