Raspberry Marshmallow's

Ingredients

  • 1/2 cup organic frozen raspberries or fresh if in season
  • 3/4 cup boiling water
  • 1/2 cup room temperature water
  • 1/3 cup gelatin I use either Changing Habits Organic Gelatin or Great Lakes Unflavoured Gelatin
  • 1/2 cup honey

Instructions

  • In a bowl, pour the boiling water over the frozen raspberries to defrost.
  • Blend the raspberries and water until it becomes a smooth liquid.
  • In a saucepan add the gelatin powder and then pour the room temperature water on top. Briefly stir to combine. Then let it sit for a few minutes and allow it to bloom.
  • Pour the raspberry mixture and honey into a saucepan. Heat on low for approximately 2 minutes, stirring continuously until the gelatin dissolves.
  • Then gently simmer this mixture on medium heat for 5 minutes. Keep on tweaking the temperature so that it simmers; but doesn't boil over or boil dry. When it is ready the liquid looks sticky.
  • Cool to room temperature, this take approximately 20 minutes.
  • Transfer into a bowl and beat on medium for 7-10 minutes or until it resembles beaten egg whites.
  • Spread the mixture into to a lined rectangular dish and refrigerate until set.
  • Remove and slice with a knife. Eat immediately or store in the fridge.
