Mango Lunchbox Slice

Ingredients

  • 10 medjool dates
  • 2 tbsp grass fed butter
  • 2 cups desiccated coconut
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 4 tbsp tahini
  • 2 tbsp honey
  • 1/2 cup dried mango or alternatively use sultanas, apricots or figs
  • 1 tsp vanilla
  • 1 tbsp cinnamon

Instructions

  • Pre-heat oven to 160 degrees C.
  • Chop up pitted dates and butter into small pieces.
  • Mix all ingredients together in a large bowl.
  • Place all dry ingredients into a food processor and blitz until it resembles a crumble consistency.
  • Add wet ingredients and blitz to combine.
  • Press mixture into a lined baking tin (approximately a 20cm x 20cm tin).
  • Bake for 15 minutes or until golden brown on top.
  • Once cooled, slice into muesli bar slices.
  • Store in a biscuit tin or freeze for use down the track.
