Ingredients

red onion
diced finely

garlic cloves

celery stalks
diced finely

fresh tomatoes
diced finely or blended up

small potatoes
peeled and diced into cubes

small sweet potato
peeled and diced into cubes

kale
diced finely

tin
tin of: organic 4 bean mix
strained and rinsed well

organic bone broth or vegetable stock
plus extra water as needed

real salt- rock or sea
season to your taste

turmeric powder
Instructions
Peel, dice and slice all ingredients and set them aside (keep onion and garlic separate).
Gently fry the onion and garlic until translucent.
Add broth, remaining vegetables and turmeric. Add any extra water needed to cover the vegetables completely.
Simmer until the vegetables are cooked and the potatoes are soft.
Mix through the beans and cook until they are hot.
Season with salt to taste.
Stir through the parsley just before serving or use it as a garnish.
