Raspberry Marshmallow’s

These marshmallows were a great success!

My children described their eating experience ‘like chewing sweet fluffy clouds’. We could all do with that kind of taste sensation every once in a while, couldn’t we?!

Conventional marshmallow’s are made from primarily sugar, GMO corn or wheat syrup, colour 120 and more. These certainly aren’t health giving ingredients!

Colour 120

According to the Food Intolerance Network, colour 120 (also know as Cochineal) “is made from the bodies of dried pregnant scale insects which feed on cacti in Central America. An extract from the cochineal insects is combined with aluminium to form carminic acid, also known as carmine.” “Consumption of colour 120 has been asscociated with ‘true allergic reactions – including urticaria, asthma, vomiting, diarrhoea and anaphylaxis.”

Hmm….this makes me question why this ingredient is allowed to be used in our food system in the first place….

These reasons alone are enough for me to want to avoid their consumption completely. I would prefer to consume (and my children) health giving whole ingredients, any day of week. The colouring in these home-made marshmallows comes only from raspberries. Raspberries is a hands down winner when compared to colour 120 every single time!


These homemade Raspberry Marshmallow’s will provide you with a great source of gelatin. Gelatin is something that our ancestors used to consume a lot of, as they would consume from the nose to the tail when they were eating an animal.

Gelatin is full of amino acids; particularly glycine, which has many benefits for our body. It’s derived from collagen; so eating gelatin has an effect on also boosting the collagen stores within our bodies.

Some of the health benefits from gelatin are:

  • improved gut health
  • better skin, hair and nails
  • greater muscle mass
  • healthy bones and joints
  • better sleep


These marshmallows are also sweetened with honey. Honey is a whole food that has not been tampered with and manufactured within a factory. It has a lower GI than sugar, is not genetically modified, contains an array of vitamins, minerals, enzymes and some anti-microbial compounds. When used in moderation, honey can be a healthy food choice.

Raspberry Marshmallow’s

  • 1/2 cup organic frozen raspberries or fresh if in season
  • 3/4 cup boiling water
  • 1/2 cup room temperature water
  • 1/3 cup gelatin I use either Changing Habits Organic Gelatin or Great Lakes Unflavoured Gelatin
  • 1/2 cup honey


  • In a bowl, pour the boiling water over the frozen raspberries to defrost.
  • Blend the raspberries and water until it becomes a smooth liquid.
  • In a saucepan add the gelatin powder and then pour the room temperature water on top. Briefly stir to combine. Then let it sit for a few minutes and allow it to bloom.
  • Pour the raspberry mixture and honey into a saucepan. Heat on low for approximately 2 minutes, stirring continuously until the gelatin dissolves.
  • Then gently simmer this mixture on medium heat for 5 minutes. Keep on tweaking the temperature so that it simmers; but doesn't boil over or boil dry. When it is ready the liquid looks sticky.
  • Cool to room temperature, this take approximately 20 minutes.
  • Transfer into a bowl and beat on medium for 7-10 minutes or until it resembles beaten egg whites.
  • Spread the mixture into to a lined rectangular dish and refrigerate until set.
  • Remove and slice with a knife. Eat immediately or store in the fridge.
